As the seasons begin to change, fall favorites like apple pie and pumpkin spice begin to make their comeback. Treat yourself to a sweet breakfast with this recipe for apple pie pancakes.
The tools you will need for this recipe include a frying pan or electric griddle, a mixing tool, a spatula, baking spray and two mixing bowls. For ingredients, you will need flour, sugar, baking powder, baking soda, salt, ground cinnamon, milk, an egg, vegetable oil, vanilla extract and finely chopped apples.
First, mix one cup of flour, one tablespoon of sugar, one teaspoon of baking soda, one-fourth teaspoon of salt and one teaspoon of cinnamon.
In a separate bowl, mix one cup of milk, one egg, two tablespoons of vegetable oil, one-half teaspoon of vanilla extract and one cup of finely chopped apples (skin optional). Once combined, add your wet ingredients to your dry ingredients and mix until fully incorporated. It should be slightly thick but still runny.
Coat your pan or griddle with non-stick baking spray on medium heat. Pour one-third cup of pancake batter into your pan and cook for about 2 minutes on each side, ensuring your batter is cooked all the way through.
This recipe calls for a lot of ingredients. In case you don’t have everything at your disposal, dry ingredients can be replaced with any pancake mix of your choosing, and eggs can be replaced with applesauce. Replacing the egg in this recipe with one-third cup of applesauce may give the pancakes a little more apple flavor and save you a couple of dollars at the grocery store.
This recipe turned out well, and each warm chunk of apple transported me to a cool fall night. The recipe only calls for the pancakes to be topped with maple syrup, but smearing on some cream cheese or topping your short stack with whipped cream adds that extra layer of flavor.
Alternatively, get them while they’re hot and top them off with some vanilla ice cream, enjoying a classic apple pie à la mode. Put on your fall sweaters and test out this recipe yourself.
