Imagine homemade pancakes, just in a jar! Just because you want something quick for breakfast, doesn’t mean you have to settle for something frozen and tasteless. This recipe will definitely get you excited to start your day!
To start, you’ll need a few ingredients and utensils. First you’ll need a medium bowl, pint-sized mason jars and a whisk. For your ingredients, you’ll need one cup of flour, two teaspoons of baking powder, two tablespoons of sugar, ½ teaspoon of salt, ⅔ cup of milk, two tablespoons of melted butter, one beaten egg and as many blueberries as you’d like to add.
First, combine the flour, baking powder, sugar and salt in the medium bowl using your whisk. Then, add the milk, butter and egg to the dry ingredients. You should stir until all the ingredients are combined, but be careful not to over mix. It’s ok if your batter has some lumps. Finally, stir in the blueberries or any other add-ins gently.
When you are using the microwave, be sure to clean it out before and after you use it. Pour your pancake mix into a clean mason jar and place it in the microwave. Make sure not to fill up the jar all the way so that it doesn’t bubble over. Do not put the lid on the jar, as it is made of metal and not safe for the microwave. Microwave it for two minutes. When you take your jar out of the microwave, be careful! It can get very hot, and older jars may break if the heat is too high. Since this recipe is for a full batch, you can fill up other jars with the remaining batter and save it for later.
If you’re not a fan of blueberries, or just want to experiment, you can try other things to add in, such as strawberries, bananas or even chocolate chips. You could also exchange the milk with buttermilk for a more buttery flavor. For a fun twist, you could top your Mason Jar Pancakes with whipped cream and a chocolate drizzle. I personally love making mine with blueberries, whipped cream and chocolate chips, but there are so many combinations, you just might have to try them all!
