As the semester kicks into high gear with a transition into the second half, you may find yourself struggling to keep up with healthy eating habits, especially if you have early classes. So, here’s a fresh and filling breakfast option you can make right in your dorm!
Start by gathering your ingredients: fresh or canned fruits, yogurt and granola. Use any of your favorite fruits. I chose to include bananas and raspberries, but blueberries, blackberries, peaches and strawberries would also work especially well. The Marketplace frequently keeps many of these out and almost always has bananas.
Yogurt and granola are also generally available in the Marketplace. I used both vanilla and peach yogurt to add some extra flavor to the layers, but feel free to use any other flavors that compliment the fruits you plan to use. I found one cup of Yoplait brand yogurt to be the perfect size, but any brand will work. You can also use dairy-free, low-fat or other varieties that suit your particular diet.
Find a spoon and a glass or bowl that matches the approximate portion size you’re looking for. Using a clear glass will add an aesthetic flair since you’ll be able to see all the layers, but isn’t necessary.
First, spoon some yogurt into the bottom of the glass or bowl and spread it around until it fills about half an inch of the glass. Add a thin layer of the granola on top. Then, slice your first fruit into small pieces and add them until they completely cover the granola. I chose to add the bananas first, cutting them into roughly quarter-inch thick slices.
Cover the fruit with another layer of yogurt and granola. Cut up and add your second fruit. For the raspberries, I found that cutting them in half made them a good size for this dish. Top with more yogurt and sprinkle granola on top.
This was enough to fill the glass I used, but if you have a larger vessel, you can add more layers, alternating between fruits each time. Then, grab your spoon and dig in!
I found this dish to be really satisfying on its own, and the raspberries and peach yogurt was an exceptionally good combination that I recommend trying out for yourself. The granola added just the right amount of crunch to compete with the soft fruits.
This recipe is a little time-consuming to assemble, but it was fun to make and tasted great!
