Recipe Review: Microwave Fudge

Sometimes, a sweet midnight snack is all you need to fuel your late-night study sessions. So here’s an easy recipe for fudge that you can make right in your dorm, with only two ingredients!

All you need is a 12-ounce bag of chocolate chips and a can of sweetened condensed milk. You can use any brand or type of chocolate you prefer — if you’re craving something sweet, milk or white chocolate is a safe bet. Use semi-sweet or dark chocolate morsels for something with a bit more of that cocoa taste. I also recommend adding some walnuts, almonds or another topping of your choosing to add some additional flavor and texture. You’ll also want to find a microwave-safe bowl, a spoon and a container in which to store the fudge.

First, pour the chocolate chips into the bowl. Pour about half the can of sweetened condensed milk over them, and place the bowl in the microwave. Set the microwave to high and let the chocolate melt for one minute.

Once the minute is up, thoroughly stir the chocolate and sweetened condensed milk together. Place the bowl back into the microwave for another minute, then thoroughly stir the mixture again. It should begin sticking to itself and pulling away from the edges of the bowl.

If your microwave has a lower wattage, two minutes may not be enough. If there are still unmelted chunks of chocolate, microwave for another 30 seconds and stir again. Repeat this until all of the chocolate appears to be melted.

If you want to use any toppings, add them to the bowl and mix them in. Transfer the contents of the bowl to a separate container or pan. I recommend lining the container with foil or parchment paper to ensure it doesn’t stick, but it’s not completely necessary to do so.

Chill the fudge in the fridge for about an hour. Once the fudge seems to be fully solidified, cut it into pieces and enjoy!

While trying this recipe out for myself, I decided to use semi-sweet chocolate chips, and I added some almond pieces as a topping. It turned out pretty chocolatey, so I think adding more almonds for nearly every bite to have a piece would have made it even better. The salt from the nuts also helped to add some flavor variation.

Make sure to also use a decent amount of force when stirring the chocolate and sweetened condensed milk together. This will help the chocolate to melt evenly and give it the proper fudge texture. Likewise, letting the fudge chill for longer will give the fudge a thicker, richer texture.

For such a simple recipe, it makes a lot of fudge, so feel free to use less of the ingredients or share with your friends!
