Recipe Review: Microwave Cookie in a Mug

Welcome back from break, Jays! We’ve reached the midpoint of the semester, and with that comes exams, research papers and plenty of stress. It can be difficult, but it’s important to take some time to treat yourself, and enjoying a nice dessert is a great way to do that. So, here’s a quick and simple cookie recipe that you can make right in your dorm.

Begin by gathering all the necessary supplies and ingredients. You’ll need salted butter, light brown sugar, granulated sugar, an egg, vanilla extract, all-purpose flour and chocolate chips or other add-ins, as well as a microwave, a microwave-safe container like a mug and a spoon or fork to stir the ingredients together. You may also want an additional bowl to help separate the egg yolk from the whites, since only the yolk will be used.

Add one tablespoon of softened butter into your mug. Microwave the butter until it fully melts. Then, add one tablespoon of each type of sugar. Stir the mixture.

Separate out the yolk of the egg and add it to the mug, along with half a teaspoon of vanilla extract. Mix in two tablespoons of flour until all of the ingredients have been fully combined. Fold in the chocolate chips. Then, sprinkle some more on top.

Set the power level of the microwave to half and cook it for about 50 seconds. Then, let it stand for about a minute to finish cooking. Enjoy it with a spoon or fork while it’s still warm.

While trying this recipe, be careful not to run the microwave for too long. When I first took the mug out, it didn’t look finished, so I put it back in for another 30 seconds or so. I think this resulted in the cookie having a slightly gummy texture, much more akin to cake than a soft cookie. The cookie should look somewhat underdone when you first take it out, since it will finish cooking on its own.

Additionally, I don’t think I added enough of the dry ingredients, which caused my own creation to appear particularly undercooked. Try using heaping tablespoons of flour, rather than leveled measurements like I did.

Aside from the texture, the cookie tasted good, with plenty of sweetness from the sugar and the chocolate. You may want to try adding some cocoa powder as well to make a more chocolatey variety. Though, I’d recommend adding a slightly larger amount of each of the wet ingredients to balance it out.

The cookie may also stick to the inside of the mug, so be sure to wash the mug immediately or soak it in hot water for easy cleaning.
