When you need something quick for breakfast before your 8 a.m. class, this simple breakfast burrito recipe is sure to energize you and keep you going. I love this recipe, especially on those days when I sleep in too late, and have to rush to get to class on time. Even on those days, it’s still important to get a good breakfast. With this fun and fast recipe, you’ll only need three ingredients and a microwave! This recipe only takes about two minutes to make, and is easy to eat on your way to class if you fold it right!
You’ll need a microwave, two large eggs, two flour tortillas and two slices of cheddar or American cheese. You could add salsa, but it’s optional. Before we begin, it’s recommended that if you do add salsa, have it either on the side, or add a few spoonfuls over the egg and cheese before folding the tortilla closed. If you do add salsa in the burrito, be sure to use the cheddar cheese, as it holds the burrito together better.
Before cooking anything in your microwave, spray a microwave-safe bowl with cooking spray. This will keep the egg from sticking to the bowl. Beat both the eggs in the bowl with a fork and pop it into the microwave. Cook for 90 seconds, pausing to stir the eggs every 30 seconds. When it is finished cooking, cut the egg patty in half. Place each piece in its own tortilla with a slice of cheese. One slice per tortilla is recommended, but I love cheese, so I’d add two. After adding the cheese, fold up the tortilla and microwave for another 20 seconds to melt the cheese. If you have the time, remember to clean out your microwave when you’re done. It’s important to keep this clean, so the next time you cook something in it, you don’t accidentally taste egg and cheese! Now dip your burrito in your salsa and enjoy!
For some added protein, a good idea would be to add in some pre-cooked meat. If you have any, you could add a slice or two of pre-cooked bacon or leftover cooked and crumbled sausage. For the best results, add the meat on top of the egg and cheese before closing the tortilla. I prefer to add sausage in my burrito, but it’s just as good without it.
